Light and Delicious Father's Day Fare

Salted Spring Radishes

Makes 4 servings

Ingredients:

1 bunch fresh radishes, rinsed, dried
6 tablespoons whipped butter or a flavored butter, softened
1 tablespoon sea salt or more to taste

Directions:

  1. Serve radishes on a decorative plate with butter and salt in bowls.
  2. Have guests spread butter on radishes and top with a sprinkle of salt.

Roasted Chicken with Spring Vegetables

Makes 4 servings

Ingredients:

1 (3-pound) chicken, trimmed of all fat
Olive oil
Paprika, to taste
Salt, to taste
Black pepper, to taste
12 medium red potatoes, trimmed around center
3 carrots, cut into sticks
1 tablespoon honey
1/4 cup fresh lemon juice
12 asparagus spears, trimmed, halved crosswise

Directions:

  1. Preheat oven to 425 degrees F. Rub inside and outside of chicken with oil and season all over with paprika, salt, and pepper.
  2. Place chicken on a wire rack in a roasting pan. Mix potatoes and carrots with oil, salt, and pepper. Place potatoes and carrots around the base of the chicken. Roast for 30 minutes.
  3. Whisk together honey and lemon juice and baste chicken with mixture. Place asparagus into pan and roast another 15 minutes. Baste again with honey mixture and roast 15 minutes longer. Remove chicken from oven and let rest 15 minutes before slicing.

Summer Vegetable Risotto

Makes 4 servings

Ingredients:

1 tablespoon olive oil
2 tablespoons onion, finely chopped
2 tablespoons garlic, finely chopped
2 cups short grain brown rice
2 cups chicken broth (or vegetable broth)
1/4 cup cooked peas
1/4 cup fresh asparagus spears
1/2 cup fresh broccoli
1/4 cup fat-free half-and-half
Salt and black pepper to taste

Directions:

  1. Heat olive oil over medium heat in a large deep pot. Saute onions and garlic in oil until soft, about 2 minutes. Mix in rice and cook about 3 to 5 minutes.
  2. Pour in broth 1/2 cup at a time, adding more after rice soaks up previous addition. Continue cooking until all liquid is added and rice is plump and soft. Mix vegetables, half-and-half, salt, and pepper into rice. Cook another 5 minutes. Serve warm.

Strawberries n' Cream

Makes 4 servings

Ingredients:

1 cup whipping cream
2 tablespoons white sugar
1/2 cup sour cream
1 tablespoon Grand Marnier or Amaretto liqueur
1 1/2-2 pints fresh strawberries, washed, hulled

Directions:

  1. Whip together cream and sugar until mixture is thick. Beat in sour cream until fully combined.
  2. Gradually beat in liqueur. To serve, divide strawberries into 4 desserts dishes and top with cream.
