Garlic and other allicins

Based on research by Dr Richard Beliveau, cancer expert and author of Foods That Fight Cancer and Cooking with Foods That Fight Cancer, Dr Servan-Schreiber ranks garlic as one of the most powerful cancer-fighting foods. Leeks, scallions and onions also top the charts on foods that inhibit the growth of cancer cells. The sulfur compounds of the plants in the alliaceous family (also called allicins) promote the death of cancer cells as well as reduce the carcinogenic effects of smoking and over-grilled meats (over-grilling meat has been shown to release nitrosamines and N-nitroso compounds).
