Generally we don't like to mess with a classic, but when it comes to grilled cheese, we think you are cheating yourself if you only stick with the basics. We have some fun options you may just love more than the original.

Grilled cheese

Whip up a batch of tomato soup, and let your creativity flow when it comes to the grilled cheese sandwich.

Caprese grilled cheese

Ingredients:

  • Crusty sourdough bread
  • Canadian mozzarella cheese
  • Thinly sliced tomatoes
  • Fresh basil leaves
  • Olive oil
  • Salt and pepper
  • 1 garlic clove

Directions:

  1. Brush olive oil on one side of each piece of bread, then sprinkle with salt and pepper. Turn the bread over, and pile the cheese, tomatoes and fresh basil on one slice of bread. Adjust the amount according to your preference. Top with the other slice of bread, making sure the sides with the oil are facing outward.
  2. Place the sandwich on a hot grill pan or in a panini maker. Flip the sandwich if you are grilling it in a pan. When the cheese is melted and it has finished cooking, slice the top off the garlic clove, and rub it on the toasted part of the bread for extra flavour.
  3. Serve immediately.

Apple, brie and arugula grilled cheese

Ingredients:

  • Thinly sliced French bread
  • Thinly sliced apples
  • Thick slices of Canadian brie
  • Fresh arugula
  • Olive oil

Directions:

  1. Brush one side of each piece of bread with olive oil. Layer the apples, cheese and arugula on the dry side of the bread. Top with the other slice of bread.
  2. Place the sandwich on a hot grill pan or in a panini maker. Flip the sandwich if you are grilling it in a pan. The sandwich is done when the bread is toasted and the cheese is melted.
  3. Serve immediately.

Strawberry, blue cheese and prosciutto grilled cheese

Ingredients:

  • Crusty sourdough bread
  • Strawberry preserves or jam
  • Canadian blue cheese
  • Sliced prosciutto
  • Olive oil

Directions:

  1. Brush one side of each piece of bread with olive oil. Spread a thin layer of strawberry preserves on the inside of each piece of bread. Layer the cheese and prosciutto on one slice of bread. Top with the other slice of bread.
  2. Place the sandwich on a hot grill pan or in a panini maker. Flip the sandwich if you are grilling it in a pan. When the bread is toasted and the cheese is melted, the sandwich is done cooking.
  3. Serve immediately.

Mexican-style grilled cheese

Ingredients:

  • Crusty sourdough bread
  • Thick slices of Canadian cheddar cheese
  • Sliced avocado
  • Sliced roasted red pepper
  • Olive oil

Directions:

  1. Brush one side of each piece of bread with olive oil. Flip the bread over, and layer the cheese, avocado and roasted red pepper on one slice of bread. Top with the other slice of bread.
  2. Place the sandwich on a hot grill pan or in a panini maker. Flip the sandwich if you are grilling it in a pan. When the cheese is melted and the bread is a golden brown, the sandwich is done.
  3. Serve immediately.
