Quick shrimp and asparagus stir-fry

Quick shrimp and asparagus stir-fry

Serves 4


  • 2 tablespoons grapeseed oil
  • 1 pound shrimp, shelled and deveined
  • 1 pound asparagus, tough ends trimmed, sliced diagonally into 2-inch pieces (halve any thick stalks lengthwise)
  • 1 tablespoon minced garlic
  • 1 tablespoon grated fresh ginger
  • 1/4 to 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons tamari
  • 2 teaspoons toasted sesame oil
  • 2 cups cooked quinoa


  1. Heat a large, heavy skillet over high heat. Add the grapeseed oil and shrimp and stir-fry 1 minute or until just pink. Place the shrimp on a plate, leaving the oil in the pan.
  2. Add the asparagus and stir-fry 1 minute. Add the garlic, ginger and red pepper flakes. Return the shrimp to the pan and stir-fry 1 minute longer. Move everything to a bowl. Toss with tamari and toasted sesame oil and serve over quinoa.

Filet mignon with brown rice

Serves 4


  • Brown rice
  • 1-1/4 cups chicken or vegetable broth
  • 2 cups uncooked brown rice
  • 1 cup diced zucchini
  • 1/2 cup diced ripe tomatoes
  • 2 tablespoons diced red onion
  • 1 teaspoon (fresh or dried) cilantro
  • 1 teaspoon crushed garlic

Filet mignon

  • Juice of 1/4 lemon or lime
  • 1/2 sprig fresh rosemary
  • 1 teaspoon crushed garlic
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 12-ounce beef filet


  1. Make the rice. Put the broth in a saucepan and bring it to a boil. Once the broth is boiling, add all the remaining rice ingredients, cover, and bring back to a boil. Allow to simmer, covered, stirring occasionally, for 30 minutes or until desired consistency.
  2. Make the filet. Preheat the broiler with the broiler pan in place. Mix the lemon or lime juice, rosemary, garlic, sea salt and black pepper and rub generously all over the filet. Broil the filet on high until desired doneness. Serve with the rice.

Shredded brisket with chipotle dressing

Serves 16


For the brisket

  • 4 pounds beef brisket
  • 1 large yellow onion, chopped
  • 10 black peppercorns
  • 4 dried bay leaves
  • 3 medium cloves garlic, crushed
  • 2 serrano chiles, coarsely chopped (or 1 jalapeno)
  • 1 teaspoon sea salt

For the chipotle dressing

  • 2 to 4 dried chipotle peppers (depending how spicy you like it)
  • 1/4 cup fresh lime juice
  • 1/4 cup red wine vinegar
  • 2 medium cloves garlic, chopped
  • 2 teaspoons sea salt
  • 1/2 teaspoon freshly ground black pepper


  • Shredded lettuce, diced jicama, fresh cilantro, chopped fresh or pickled jalapenos, pickled red onions


  1. Put the brisket ingredients and 2 cups of water into a 6-quart slow cooker. Cook for 8 to 10 hours on low or 5 to 6 hours on high.
  2. Transfer the brisket to a large bowl and let it sit until it's cool enough to handle. Reserve the cooking liquid. Scrape away and discard any fat from the brisket. Using your fingers or two forks, tease the meat into shreds. Moisten with 1/2 cup of the reserved broth. Save the remaining broth for another use.
  3. Puree the dressing ingredients in a blender. Mix the dressing into the shredded beef. It's best to make this recipe ahead and refrigerate for at least an hour (overnight is even better) to let the flavors meld. Reheat when you're ready to eat.

Chicken sausage with brown rice fusilli

Serves 4


  • 2 cups brown rice fusilli
  • 12 ounces chicken sausage
  • 2 cups cubed zucchini
  • 1 cup broccoli florets
  • 1/4 cup minced red onion
  • 1 tablespoon crushed garlic
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper


  1. Prepare the pasta according to package directions. When the pasta is done, strain, rinse and set aside.
  2. Cut the chicken sausage into 1-inch pieces.
  3. Preheat a large nonstick skillet. Add 1 tablespoon of water and stir in the sausage, onion and garlic. Cook on medium heat until lightly browned. Incorporate the zucchini, broccoli, salt and pepper, and cook until vegetables are crisp-tender, about 3 to 5 minutes.
  4. Add the pasta to the skillet and toss until warmed through. Serve immediately.

Slow cooker veggie chili

Serves 6 to 8


  • 1 (15 ounce) can organic kidney beans
  • 1 (15 ounce) can organic pinto beans
  • 1 (15 ounce) can organic black beans
  • 1 (15 ounce) can organic white beans
  • 1 (15 ounce) can organic adzuki beans
  • 1 (15 ounce) can organic garbanzo beans
  • 1 or 2 cups dry lentils (use more for thick chili, less for soupy chili)
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chili powder
  • 1 cup diced organic celery
  • 2 cups organic vegetable broth


  1. Partially drain the beans, and then dump everything into your slow cooker. Cook for 4 to 8 hours on medium.
  2. Top with diced avocado, chopped onion, chopped cilantro or jalapenos.
