Mustard Dill Red Potato Salad

Serves 6

Ingredients:

  • 4 large red potatoes

  • 2 celery stalks, diced

  • 2 green onions, sliced (green and white parts)

  • 1/4 cup chopped fresh dill

  • 2 tablespoons vegan mayo

  • 1 tablespoon Dijon mustard or more to taste

  • 3 tablespoons extra virgin olive oil

  • Salt and freshly ground black pepper to taste


Directions:

  1. Cut potatoes into bite-sized cubes and place in a large pot of boiling salted water. Cook until just fork tender.

  2. Rinse under cold water and allow to cool.

  3. Meanwhile, in a large bowl, combine the remaining ingredients.

  4. Add potatoes to the bowl and toss to combine.

  5. Serve immediately or refrigerate overnight, tossing again before serving.
