Grilled Nectarines

Serves 4

Ingredients:

  • 4 ripe nectarines, halved, pitted

  • 1/4 cup agave nectar

  • Ground cinnamon for dusting

  • Your favorite dairy-free vanilla bean ice cream


Directions:

  1. Preheat grill to medium and oil the grill grates.

  2. Brush the cut side of nectarines with agave and spinkle with cinnamon.

  3. Grill nectarines, turning a few times, for 4 minutes or until decorated with grill marks.

  4. Place nectarines in cut side up in 4 dessert bowls and top each with a mini scoop of vanilla bean ice cream. Serve immediately.


Cook's note: For a showy presentation, serve nectarines with a cinnamon syrup, garnished with a cinnamon stick, alongside a trio of ice cream scoops.
