Vegan Breakfast Burritos

Makes 4

Ingredients:

  • 1 tablespoon olive oil

  • 1 pound firm tofu, pressed, drained, crumbled

  • 1 garlic clove, minced

  • 1/2 teaspoon turmeric

  • 1 teaspoon chili powder

  • 1/2 teaspoon dried oregano

  • Salt and freshly ground black pepper

  • 3 green onions, sliced (green and white parts)

  • 1 cup cooked (or canned) black beans

  • 1/4 cup finely chopped fresh cilantro

  • 4 whole grain tortillas, warmed

  • Salsa

  • Shredded vegan cheese

  • Vegan sour cream


Directions:

  1. Heat oil in a large skillet over medium heat.

  2. Add tofu and cook, stirring often, for about 2 minutes.

  3. Add garlic, turmeric, chili powder, and oregano. Cook, stirring often, for 2 to 3 minutes.

  4. Season with salt and pepper. Add onion, black beans, and cilantro. Cook, stirring, for 2 to 3 minutes.

  5. Lay tortillas on a flat surface and divide tofu scramble among the tortillas.

  6. Fill with salsa, cheese, and sour cream as desired.

  7. Roll tortillas around filling into burritos and serve.
