Quick Red Pepper Relish

Makes 2 cups

Ingredients:

  • 1-1/2 cups roasted red peppers, chopped

  • 1/2 cup minced red onion

  • 2 garlic cloves, minced

  • 1/2 teaspoon dried oregano

  • 1/3 cup white balsamic vinegar

  • 2-1/2 tablespoons sugar


Directions:

  1. Place all ingredients in a food processor and pulse for a chunky relish or puree for a smooth spread.
