Summer Tomato Plate

Serves 4

Ingredients:

  • 4 to 6 vine-ripe tomatoes, sliced

  • 1/2 small red onion, thinly sliced

  • 1/4 cup finely torn fresh basil

  • 3 tablespoons extra virgin olive oil

  • 2 tablespoons red wine vinegar

  • Sea salt and freshly ground black pepper to taste


Directions:

  1. On a serving platter, arrange rows of tomato slices, overlapping slices.

  2. Scatter with onions and basil.

  3. Drizzle with olive oil and vinegar.

  4. Season with salt and pepper. Serve immediately.
