Quick Eggplant Burgers

Serves 4

Ingredients:

  • 1 (11-ounce) package Dominex Eggplant Burgers (4 patties per package)

  • 1 red onion

  • 1 tablespoon sugar

  • 2 teaspoons olive oil

  • 2 tablespoons balsamic vinegar

  • Salt and freshly ground black pepper to taste

  • Vegan mayonnaise

  • 4 whole grain buns, toasted on the grill

  • 4 red leaf lettuce leaves


Directions:

  1. Let eggplant burgers thaw at room temperature for 20 minutes before grilling.

  2. Meanwhile, half the onion and cut into thin slices, separating the slices.

  3. Heat oil in a large skillet over medium heat. Add onions and cook, stirring ocassionally, until onions are very soft.

  4. Add sugar and balsamic vinegar. Cook, stirring often, until onions turn golden and are caramelized.

  5. Season onions with salt and pepper. Remove from heat.

  6. Preheat grill to medium-high heat and oil the grill grate. Place eggplant burgers in a grill basket and place on the grill.

  7. Grill burgers for 3 minutes per side or until heated through.

  8. Spread vegan mayo on buns. Set a burger on each of the bottom halves of the buns. Top with caramelized onions, lettuce leaf, and the remaining bun.

  9. Serve immediately with Baked Sweet Potato Fries or Grilled Sweet Potato Salad.


Cook's note: Make 3 or 4 batches of caramelized onions and keep them in your freezer. Partially thaw them in a large pot of warm water and simply reheat in a skillet.
