Raw Zucchini Wraps

Makes 12

Ingredients:

  • 2 zucchini, ends trimmed

  • 1 large carrot, cut into matchsticks

  • 1/2 bell pepper, cut into matchsticks

  • 1/2 cup fresh flat leaf parsley leaves

  • 1/2 cup smooth almond butter

  • 1 tablespoon finely chopped fresh ginger

  • 1 clove garlic, chopped

  • 1 tablespoon lemon zest

  • Juice of 1/2 lemon

  • 3/4 cup water


Directions:

  1. Use a vegetable peeler to cut zucchini into long thin strips.

  2. Lay strips out flat and fill each with carrot, bell pepper, and parsley. Roll zucchini strips around vegetables and set on a serving platter seam side down.

  3. Place remaining ingredients in a food processor and blend until smooth. Serve sauce with zucchini wraps.
