Sauteed Tofu Pita Sandwiches

Tofu Pita Sandwiches

Serves 2

Ingredients:

  • 1 tablespoon olive oil

  • 2 tablespoons minced onion

  • 1/2 cup julienned carrots

  • 1 (12-ounce) block firm tofu, pressed, cut into cubes

  • Salt and freshly ground black pepper to taste

  • 2 tablespoons vegan mayonnaise

  • 2 whole wheat pita breads, cut in half

  • Handful of fresh arugula leaves

  • Your favorite sprouts for garnish


Directions:

  1. Heat oil in a medium skillet over medium heat.

  2. Add onion, carrots, and tofu. Cook, stirring occasionally, until tofu is lightly browned.Season with salt and pepper.

  3. Spread pita with mayonnaise. Stuff with tofu mixture. Top with arugula and sprouts to serve.
