Kalamata Olive Scones

Makes 8

Ingredients:

  • 1-3/4 cups white whole wheat flour

  • 2-1/2 teaspoons baking powder

  • 1/2 teaspoon sea salt plus more for sprinkling

  • A few grinds black pepper

  • 1 tablespoon lemon zest

  • 1/2 cup vegan margarine, cold, cut into small pieces

  • 3/4 cup pitted Kalamata olives

  • 1 clove garlic, minced

  • 2 teaspoons minced fresh rosemary

  • 1/2 cup plain soy yogurt

  • 3 tablespoons plain soy milk, divided


Directions:

  1. Preheat oven to 400 degrees F.

  2. In a food processor, combine flour, baking powder, 1/2 teaspoons salt, pepper, and zest. Pulse a few times.

  3. Add margarine and pulse until a coarse mixture forms.

  4. Add olives and garlic and pulse a few times.

  5. Add yogurt and 2 tablespoons milk and blend until a sticky dough forms.

  6. Dump dough onto a lightly floured surface and knead into a flat disk, adding flour a bit at a time, if necessary.

  7. Use a sharp knife to cut disk into 8 wedges.

  8. Place wedges on a baking sheet and brush with remaining milk. Sprinkle each scone with a little sea salt.

  9. Bake for 25 minutes or until just golden. Cool slightly on a wire rack. Serve warm.


Cook's note: Make an extra batch of scones and cool completely. Wrap each in freezer wrap or place in an airtight freezer bag and freeze up to 2 months. Let thaw at room temperature.
