Watermelon Lime Salad

Serves 8

Ingredients:

  • 8 cups cubed watermelon (seeds removed)

  • 2 tablespoons raw sugar

  • Juice and grated zest of 2 limes

  • 3 tablespoons fresh thyme leaves


Directions:

  1. Place watermelon in a large bowl.

  2. Place raw sugar in a spice grinder and grind until a fine powder

  3. In a small bowl, whisk together sugar, lime juice and zest, and thyme leaves.

  4. Pour agave mixture over watermelon and toss to coat.

  5. Serve chilled.
