Cinco de Mayo Sundaes with Cinnamon Tortilla Crisps

Serves 4

Ingredients:

  • 3 tablespoons vegan margarine

  • 2 tablespoons granulated sugar

  • 1 tablespoon brown sugar

  • 4 (6-inch) flour tortillas, cut into thin strips

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon chili powder

  • 1 pint vegan vanilla ice cream

  • 1/2 cup vegan chocolate sauce


Directions:

  1. In a large skillet over medium heat, melt butter and sugar, swirling the skillet to combine.

  2. Add tortilla strips and cook, stirring often, until just crisp.

  3. Transfer to a large plate and sprinkle with cinnamon and chili powder, tossing to coat.

  4. Dish out a half-cup of ice cream into 4 dessert bowls and drizzle with chocolate sauce.

  5. Sprinkle tortilla chip crisps on top and serve immediately.
