Apricot Wheatgrass Sorbet

Serves 6

Ingredients:

  • 2 cups chopped, pitted fresh apricots

  • 3 ounces fresh wheatgrass juice

  • 1/3 cup agave nectar

  • 3 cups crushed ice


Directions:

  1. Place all ingredients in a food processor or blender and pulse to chop.

  2. Turn motor to high and continue to blend until smooth.

  3. Serve immediately or store in the freezer in an airtight container. If frozen, let sorbet thaw slightly before serving.


Cook's note: For a real treat, sprinkle with shredded toasted coconut before serving.
