Barbecued Tofu Nuggets
Makes 12 nuggets
Ingredients:
6 ounces smoked barbecued tofu, cut into 12 cubes
1/3 cup vegan barbecue sauce
1-1/2 cups finely crushed potato chips
Directions:
Preheat oven to 375 degrees F. and grease a baking sheet.
Pat tofu dry with paper towels and brush with barbecue sauce.
Place potato chips in a bowl. Drop tofu into bowl and lightly toss to coat with chips.
Place nuggets on prepared baking sheet and bake for 12 minutes or until hot and crispy.
Let cool on baking sheet for 1 minute then transfer to a serving platter.
