Italian-Style Farro Salad

Serves 6

Ingredients:

  • 4 cups vegetable broth

  • 1-1/2 cups farro

  • 1 cup sun-dried tomatoes packed in olive oil, drained, chopped

  • 2/3 cup finely chopped red onion

  • 1/4 cup finely chopped fresh basil leaves

  • 1 large garlic clove, minced

  • 1/2 teaspoon dried Italian seasoning or more to taste

  • 2 tablespoons balsamic vinegar

  • 1/4 cup extra-virgin olive oil

  • Salt and freshly ground black pepper to taste


Directions:

  1. In a medium saucepan over high heat, combine broth and farro and bring to a boil.

  2. Reduce heat to medium-low, cover, and simmer until the farro is tender, about 30 minutes.

  3. Drain farro and transfer to a large bowl.

  4. Add tomatoes, onion, and basil, tossing to combine.

  5. In a medium bowl, whisk together the garlic, Italian seasoning, vinegar, and olive oil. Add the vinaigrette to the salad and toss to coat.

  6. Season with salt and pepper. Serve warm or chilled.
