Rave-Worthy Roasted Broccoli

Serves 6

Ingredients:

  • 1 pound broccoli florets

  • 2 tablespoons olive oil

  • Salt and freshly ground black pepper to taste

  • 1 tablespoon finely grated orange zest

  • 2/3 cup dried currants


Directions:

  1. Preheat oven to 400 degrees F. and spray a baking sheet with cooking spray.

  2. In a large bowl, combine broccoli and olive oil. Season with salt and pepper.

  3. Spread broccoli on prepared baking sheet and roast for 15 to 20 minutes, or until tender and lightly browned.

  4. Transfer broccoli to a serving bowl and toss with orange zest and currants. Add a little more olive oil if desired.

  5. Serve warm.
