Blueberry Mint Salad

Serves 4

Ingredients:

  • 2 cups fresh blueberries (or frozen, thawed, drained)

  • 1 large ripe but firm banana, peeled, sliced

  • 2 teaspoons finely grated lime zest

  • Juice of 1 lime

  • 2 tablespoons minced fresh mint


Directions:

  1. Combine all ingredients in a bowl and toss gently.

  2. Serve immediately or store in an airtight container in the refrigerator for up to 2 days.


Cook's note: This salad is best eaten right after it is made; the berries will soften and the bananas will get mushy the longer it sits.
