Spicy Sweet Beets

Serves 6

Ingredients:

  • 1-1/2 pounds small red or golden beets

  • Olive oil

  • Salt and freshly ground black pepper to taste

  • 1/2 cup apricot preserves

  • 1 tablespoon finely grated lemon zest

  • 1/4 teaspoon ground cinnamon

  • 1/4 teaspoon ground cloves

  • 1/4 teaspoon freshly grated nutmeg

  • Pinch of cayenne


Directions:

  1. Preheat oven to 375 degrees F. and grease a baking dish to hold the beets in one layer.

  2. Scrub beets and trim ends. Rub with olive oil and season with salt and pepper.

  3. Place beets in the prepared baking dish, cover with foil, and bake for 45 minutes or until beets are tender.

  4. Remove beet skins, if desired. Cut beets into 1/4-inch slices and place in a large bowl.

  5. In a small skillet over medium-low heat, combine apricot, lemon zest, and spices. Cook, stirring, until heated through.

  6. Pour apricot mixture into bowl and toss to coat beets. Serve warm or cold.
