Coconut Pineapple Rice

Serves 8

Ingredients:

  • 2 cups jasmine rice

  • 1-1/4 cups water

  • 1 cup coconut milk

  • 1/2 cup chopped green onions (white and green parts)

  • 1 cup canned, drained pineapple chunks, coarsely chopped

  • 1/2 cup finely chopped fresh cilantro

  • Salt and freshly ground black pepper


Directions:

  1. Bring rice, water, and coconut milk to a boil in a pot over medium-high heat.

  2. Lower heat to low, cover, and simmer until liquid is absorbed, about 15 to 20 minutes.

  3. Remove from heat and let sit for 10 minutes before fluffing with a fork.

  4. Transfer to a large bowl and add remaining ingredients, tossing to combine. Serve warm.
