Maple Plum Upside Down Cake

Serves 8

Ingredients:

  • 1/4 cup vegan margarine

  • 1/3 cup pure maple syrup

  • 1/2 cup coarsely chopped walnuts

  • 8 plums, halved, pitted, sliced

  • 2 tablespoons ground flax

  • 6 tablespoons water

  • 1-1/2 cups white whole wheat flour

  • 2 teaspoons baking powder

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon salt

  • 1/3 cup olive oil

  • 1/2 cup granulated sugar

  • 1/4 cup firmly packed brown sugar

  • 1 teaspoon pure vanilla extract

  • 1/4 vegan buttermilk


Directions:

  1. Preheat oven to 350 degrees F. and generously grease an 8-inch round cake pan.

  2. In a medium saucepan over medium heat, melt margarine.

  3. Add syrup and walnuts and cook, stirring occasionally, until thickened.

  4. Pour syrup mixture into prepared pan, turning to coat the bottom.

  5. Arrange plums on top of syrup mixture in overlapping concentric circles. Set aside.

  6. In a small bowl, combine flax and water and set aside for 5 to 10 minutes.

  7. In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.

  8. In a large bowl, whisk together oil, sugars, vanilla, and buttermilk. Whisk in flax mixture.

  9. Add oil mixture to flour mixture and mix until just moistened.

  10. Spread batter over plums. Bake for 1 hour or until a knife inserted in the center comes out clean.

  11. Cool on a wire rack for 5 minutes then run a knife around the edges of the cake to loosen it from the pan.

  12. Invert cake pan onto a serving plate, tapping the bottom of the pan to help release the cake. Serve warm.
