Warm Chickpea Salad

Makes 4 cups

Ingredients:

  • 2 (15-ounce) cans chickpeas or garbanzo beans, rinsed, drained

  • 1/3 cup finely chopped fresh parsley

  • 1 tablespoon finely grated lemon zest

  • 1/2 to 3/4 cup vegan mayonnaise

  • Salt and freshly ground black pepper to taste


Directions:

  1. In a large nonstick skillet over medium heat, combine chickpeas, parsley, and lemon zest.

  2. Cook, stirring, for 3 to 4 minutes or until heated through.
