Vegan Grilled Cheese and Sun-Dried Tomato Sandwich

Makes 1

Ingredients:

  • 2 slices whole wheat or whole grain bread

  • 1 tablespoon vegan margarine

  • 1 slice vegan cheese

  • 3 tablespoons chopped sun-dried tomatoes packed in olive oil


Directions:

  1. Spread margarine on one side of each piece of bread.

  2. Spray a nonstick skillet with cooking spray and place it over medium heat.

  3. When skillet is hot, place one slice of bread, margarine side down, in skillet.

  4. Top with cheese and sun-dried tomatoes. Cover with remaining slice of bread, margarine side up.

  5. Lightly press sandwich with the back of a spatula (spray spatula with cooking spray to keep it from sticking to the bread).

  6. Cover skillet and cook for 2 minutes or until bottom is lightly toasted.

  7. Flip sandwich, cover skillet, and cook an additional 2 minutes or until cheese is melted and both sides of sandwich are lightly browned.

  8. Transfer to a plate and cut in half to serve.
