Golden Beet, Radish and Carrot Salad

Serves 6

Ingredients:


  • 3 golden beets, tops trimmed, scrubbed

  • 2 large carrots (the fatter the better), scrubbed

  • 1 bunch radishes, leafy tops and root ends trimmed, scrubbed

  • 1 small clove garlic, minced

  • 1 tablespoon minced shallot

  • 2 tablespoons fresh squeezed orange juice

  • 1 tablespoon finely grated orange zest

  • 3 tablespoons extra virgin olive oil

  • Salt and freshly ground black pepper to taste

  • 2 teaspoons fresh thyme leaves

  • 1 tablespoon finely chopped fresh parsley


Directions:

  1. Using a mandoline or very sharp knife, slice beets, carrots, and radishes into paper-thin rounds. Place vegetables in a large bowl.

  2. In a small bowl, whisk together garlic, shallot, orange juice, and orange zest.

  3. While whisking orange juice mixture, add oil in a thin stream to make a vinaigrette. Season with salt and pepper.

  4. Drizzle vinaigrette over vegetables and toss to coat. Sprinkle with herbs, toss again, and serve.


Cook's note: For a showy presentation, arrange vegetable rounds in a concentric pattern on a large serving platter then sprinkle with herbs.
