For the chicken burgers

  • 1 pound ground chicken breast
  • 4 cloves garlic, mashed or pressed in a garlic press
  • 1/4 cup crumbled feta cheese
  • 1-1/2 cups fresh baby spinach, roughly chopped
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 egg, mixed

For the rosemary mayonnaise

  • 1/2 cup good-quality mayonnaise (low fat or fat free are fine to substitute)
  • 1 tablespoon fresh rosemary, very finely chopped
  • Zest from one lemon
  • Salt and pepper to taste

Directions:

  1. In a small bowl add all of the ingredients for the mayonnaise and mix well. Cover and keep in the refrigerator until ready to use.
  2. In a mixing bowl add all of the ingredients for the chicken burgers mixing very well. Form into 4 patties and place in the freezer on a plate lined with wax paper for about 10 minutes. This will help the burgers be easier to handle as they tend to be very sticky.
  3. Lightly oil your grill grate and place the chicken burgers on the grill. Cook 5-7 minutes per side or until the center is cooked completely and no longer pink.
  4. Serve on fresh toasted buns and spread with the rosemary mayonnaise. Top with your favorite fixings and serve immediately.
