We even spiked the salsa! This Mexican menu has all of your favorites, like chicken soup made with salsa and beer as well as a fresh berry margarita. All that's missing from this fabulous feast is a gaudy sombrero and a piñata!

Tequila pico de gallo

Tequila pico de gallo recipe

Yields about 2 cups

Ingredients:

  • 1 cup diced tomatoes
  • 1/2 cup diced yellow tomatoes
  • 1/4 cup diced red onions
  • 1-1/2 tablespoons jalapeños, chopped
  • 1-1/2 tablespoons garlic minced
  • 2 tablespoons tequila
  • Juice of 1 lime
  • 2 tablespoons cilantro
  • Salt and pepper

Directions:

  1. Mix the tomatoes, onions, jalapeños, garlic, tequila, lime juice and cilantro. Add salt and pepper and mix to combine. Serve with chips.

Boozy chicken & salsa soup with beer recipe

Serves about 4

Ingredients:

  • 3-1/4 cups chicken broth
  • 3/4 cup Mexican beer (we used Tecate)
  • 1 cup salsa (we used pico de gallo)
  • 1/2 cup diced tomatoes with juices
  • 3 tablespoons chopped cilantro
  • 1 cup shredded chicken (we used rotisserie)
  • 2-1/2 tablespoons fajita seasoning
  • Salt and pepper
  • 1 jalapeño, chopped and seeded
  • Avocado for garnish

Directions:

  1. Mix everything (except for the avocado) in a medium saucepan over medium heat. Add salt, pepper and fajita seasoning and stir to mix. Reduce heat to low and simmer for about 20 minutes.
  2. Serve soup with cilantro and avocado slices.
Tequila braised steak salad with avocados

Tequila braised steak salad with avocados recipe

Serves 2

Ingredients:

  • 1/2 pound skirt steak
  • About 2-1/2 tablespoons tequila
  • 3 tablespoons chopped cilantro
  • Salt and pepper
  • 2 cups mixed green salads
  • 1/2 tomato, sliced
  • About 3 tablespoons chopped red onion
  • 1/2 avocado, sliced

Directions:

  1. Rub the cilantro on the steaks and add salt and pepper. Add to a bowl and top with tequila. Shake to coat and cover with plastic wrap. Chill for at least 2 hours to marinate.
  2. Preheat a grill to medium. Lightly grease the grill with nonstick cooking spray. Place the steaks on the grill and grill for about 4 minutes on each side or until just medium.
  3. Separate mixed greens into two bowls. Slice the steak and place on the salad. Add sliced tomatoes, avocado, chopped onion and cilantro.
Blackberry & strawberry margarita

Blackberry & strawberry margarita recipe

Serves about 4

Ingredients:

  • 4 ounces fresh blackberries
  • 4 ounces fresh strawberries
  • 1/2 cup tequila
  • 1/2 cup diet cranberry juice
  • 1/4 cup sugar
  • 1/3 cup lime juice
  • Ice (about 3 cups)

Directions: 

  1. Place the ice in a blender. Add blackberries, strawberries, tequila, cranberry juice, sugar and lime juice. Pulse on low until mixture is smooth.
  2. Serve in margarita glasses rimmed with sugar and enjoy!
