Microwave sweet potato chips
Sweet, salty and crunchy, these sweet potato chips are a satisfying snack or the perfect accompaniment to a burger.
- 1 medium sweet potato
- 2 teaspoons olive oil
- 1/2 teaspoon salt
Scrub the sweet potato clean. Using a mandoline or sharp knife,
slice the sweet potato into rounds 1/8-inch or thinner.
In a medium bowl, toss the sweet potato slices with the olive oil and salt to evenly coat.
Place the sweet potato slices in a single layer on a paper towel and microwave on
high until they just begin to brown, three to four minutes. Allow to cool before eating.
