Egg salad is one of those things that can get old and quickly. Here we share some untraditional ways to make it a little more exciting so you can enjoy it more often. You can enjoy these egg salad recipes as a sandwich, a wrap or even scooped on top of a nice big green salad. Egg salad is also great for meal prepping and taking to work as an easy lunch. No matter if you choose the Southern style, the more unique flavor using curry powder or the creamy yet spicy jalapeño and avocado egg salad, this is sure to be one to make everyone's taste buds happy.

Southern-style egg salad recipe

Serves 2

Ingredients:

  • 2 hard-boiled eggs, mashed or finely chopped
  • 1 tablespoon mayonnaise (you can also substitute low-fat, fat-free mayonnaise or even Greek yogurt)
  • 2 tablespoons minced sweet onion
  • 1 tablespoon sweet pickle relish
  • Salt and pepper to taste

Directions:

  1. In a mixing bowl add the mashed or chopped eggs, the mayonnaise, onion, relish and season with salt and pepper. Mix well and chill for a few hours to let the flavors blend.
  2. Serve on whole grain bread and top with your favorite sandwich toppings such as baby spinach.
Curried egg salad recipe

Curried egg salad recipe

Serves 2

Ingredients: 

  • 2 hard-boiled eggs, mashed or finely chopped
  • 1 tablespoon thinly sliced green onions
  • 1 tablespoon golden raisins (or regular raisins)
  • 1 teaspoon slivered almonds (optional)
  • 1 tablespoon mayonnaise (may also substitute low-fat, fat-free mayonnaise or Greek yogurt
  • 1 tablespoon curry powder.

Directions:

  1. In a bowl mix all of the ingredients and allow the egg salad to chill for several hours to help the flavors blend.
  2. Serve the egg salad in a wrap and top with your favorite sandwich toppings such as tomato or spinach.
Jalapeno and avocado egg salad recipe

Jalapeño and avocado egg salad recipe

Serves 2

Ingredients: 

  • 2 hard-boiled eggs, mashed or finely chopped
  • 1 small avocado (or 1/2 large avocado) mashed
  • 1 small jalapeño, seeded and finely minced
  • 1 tablespoon red onion, minced (optional)
  • Juice of 1/2 fresh lime
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Directions:

  1. In a bowl add all of the ingredients mixing very well. Allow the egg salad to chill several hours to help blend the flavors.
  2. Serve with an assortment of fresh vegetables, crackers or over a green salad.
