Cream together the butter and sugar in a large bowl. One by one, add the eggs, stirring as you add each one. Mix in almond extract. In a separate bowl, sift together flour, salt and baking powder. Pour into the creamed mixture and stir well.
Take the dough out of the bowl and place it on floured wax paper. Wrap up the dough with the wax paper and put it into the refrigerator for an hour.
Preheat the oven to 350 degrees. Flour the surface you'll be using to roll out the dough and make the cookies. Remove the dough from refrigerator and roll it out so it's a quarter-inch thick.
Cut out 30 cookies from the rolled dough using holiday-themed cookie cutters. Place cookies on a baking sheet and bake for eight minutes. Let cookies cool completely.
Get creative and decorate the cookies with store-bought or homemade icing and sprinkles. Give them as stocking stuffers and save a couple for jolly old St. Nick, too!
