Serves about 8

Ingredients:

  • 1/4 cup sugar
  • 1 package active dry yeast
  • 1/2 cup milk
  • 2 tablespoons butter
  • 3 cups bread flour
  • 3/4 cup canned pumpkin
  • Dash of salt

For the filling:

  • 1 granny smith apple, chopped
  • 6 tablespoons butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 teaspoons pumpkin pie spice

For the topping:

Directions:

  1. Heat milk and butter in the microwave until warm (110 degrees F). Mix warmed milk, butter and sugar with yeast and let bubble up (about 5 minutes, the top will be foamy). Add the pumpkin and flour, 1 cup at a time, until dough is slightly sticky. Move dough to a lightly floured surface and knead until elastic, about 5 minutes.
  2. Lightly oil a bowl and place dough into the bowl. Cover with a damp towel and let rise in a warm room until doubled in size, about 90 minutes.
  3. While dough rises, prepare filling by melting 2 tablespoons butter in a pan. Add chopped apples and cook until soft. Remove from heat and stir in sugars and pumpkin pie spice.
  4. Once dough has risen, transfer to lightly floured surface and roll into a ball. Cover with a dry, clean towel and allow to rest for 5 minutes.
  5. Once dough has rested, roll it into a rectangle, about 12 x 20-inches. Brush dough with the melted butter and then cover with the apple sugar mixture. Then, using a pizza cutter, cut the dough into six 2-inch wide strips. Stack the strips on one another and cut them into six sections (you want them to be as tall as the loaf pan is).
  6. Stack each section into a buttered 9 x 5-inch loaf pan next to each other. Cover the pan with a damp towel and let the dough rise again for about 45 minutes.
  7. While dough is rising again, preheat the oven to 350 degrees. Once dough has risen, bake the bread for about 30 minutes until the top is golden brown.
