Crepes always strike a delicate balance between light and satisfying for breakfast and can be sweet or savory. The French are so smart. We recommend making two crepes for each guest and offering them a variety of homemade and season-appropriate fillings.

Follow this simple crepe recipe and add one-half cup of pumpkin puree to your crepe batter if you want just a touch of pumpkin flavor. They're delicious and enhance the crepe's overall flavor, regardless of what your guests put inside.

Guests can spoon out and fill their crepes with their desired amount of fruit and other fillings, including creme fraiche, as it goes delectably with fruit.

If someone prefers a savory crepe, whip up some scrambled eggs (just be sure not to use pumpkin in your crepe recipe if you're going to go the savory route). Add whatever you'd like to your eggs, including bacon, sausage, cheese and fresh diced veggies like onions, green peppers or tomatoes.

Baked apples taste best when wrapped in a warm and perfectly sweet crepe. Here is a crepe-friendly baked apple recipe.

Serves 4

Ingredients:

  • 4 apples, peeld and diced into cubes (1 apple per person)
  • Water
  • 1 cup brown sugar
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg

Directions:

  1. Preheat oven to 375 degrees F.
  2. Put apples into baking dish and sprinkle with water.
  3. Sprinkle brown sugar on top of apples, then top with cinnamon and nutmeg.
  4. Cover baking dish with aluminum foil.
  5. Bake in preheated oven for 30 minutes, or until fork tender.
  6. Serve baked apples as a crepe filling.

Two to three filling options is perfect for your crepe buffet! Adults and kids will love putting their own crepes together and choosing their fillings. Served with espresso and spiced tea, it makes for the perfect breakfast.
