Pie In One Bite!

Who wants to feel guilty about eating a whole pie? These one bite pie squares are perfect for a party or a simple and light dessert.

Pie is always a big hit at the holiday dessert buffet. However, we all know that sometimes, the time it takes to make a pie is not always there. That is why we have made things a million times easier for you! These delicious pie bites will give you all the flavor of pie, without all the work of pie. To make things even easier, just use store bought piecrust. It cuts the time in half!

Pie bite bottoms recipe

Yield 14 (3-inch) pie bites

Ingredients:

  • 1 (9-inch) raw piecrust
  • 3-inch round biscuit cutter

Directions:

  1. Preheat oven to 350 degrees F.
  2. Cut out rounds, add to parchment lined baking sheet.
  3. Prick each round with a fork so the dough does not puff up too much.
  4. Bake for about 10 minutes until browned.
  5. Let cool and top with desired topping.

Dark chocolate bite size pie bites recipe

Yield 14 (3-inch) pie bites

Ingredients:

  • 2-1/2 tablespoons white sugar
  • 2 tablespoons cornstarch
  • Pinch of salt
  • 2 large egg yolks
  • 1-1/2 cups half and half
  • 4 ounces dark (or semi-sweet) chopped chocolate
  • 1 tablespoons butter (room temperature)
  • 1/2 teaspoon vanilla extract

Directions:

  1. In a high-sided saucepan, add white sugar, cornstarch and salt. Stir to combine.
  2. In a 2-cup glass liquid measuring cup, add egg yolks and half and half. Whisk to completely combine.
  3. Turn stove on to medium-heat and whisk egg and half and half mixture into the sugar mixture. Whisk continuously until mixture is thick and creamy. It should be a little thicker than pudding. About 8 minutes.
  4. Remove pan from heat and add in chopped chocolate, butter and vanilla extract. Whisk until combined.
  5. Store covered (press plastic wrap directly on top of pudding) overnight in the fridge until firm.
  6. Pipe onto piecrust rounds and top with whipped cream.

Coconut cream bite size pie bites recipe

Yield 14 (3-inch) pie bites

Ingredients:

  • 2-1/2 tablespoons cornstarch
  • 1/2 cup white sugar
  • Pinch of salt
  • 1 cup whole milk
  • 2/3 cup full-fat coconut milk
  • 2 eggs yolks (beaten)
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract
  • 1/3 cup unsweetened coconut
  • Optional: 1/3 cup toasted coconut

Directions:

  1. In a high-sided saucepan, add cornstarch, white sugar and salt. Bring to medium-heat and whisk in whole milk and coconut milk.
  2. Once thick, whisk in a small spoonful of hot mixture into egg mixture. This will help temper the eggs so they do not cook while being incorporated into the pudding mixture. Add a total of 1/3 cup of hot milk mixture to egg yolks, then whisk egg mixture into the saucepan.
  3. Cook for about 3 minutes. Remove from heat and add butter and vanilla extract. Add coconut, cover with plastic wrap (press directly onto pudding) and store overnight in the fridge until firm.
  4. Pipe onto piecrust rounds and top with whipped cream. Sprinkle with toasted coconut if desired.

Banana cream bite size pie bites recipe

Yield 14 (3-inch) pie bites

Ingredients:

  • 1 small box instant banana pudding
  • 1-3/4 cups white milk
  • 2-3 sliced ripe bananas (1/2-inch slices)

Directions:

  1. In a medium bowl, add banana pudding mix and whole milk. Whisk together until thick. Cover with plastic wrap and keep overnight in the fridge.
  2. Add one banana slice to each pie round, pipe banana pudding on top and top with whipped cream.
