Looking for a light, fresh snack or appetizer to serve your guests before dinner, or with wine or cocktails? Look no further than these flavorful Italian skewers. Read on for easy, step-by-step instructions to create this simple dish.
Gather all your ingredients together before getting started. Give yourself plenty of space for cutting and assembling the skewers. Be sure to wash your hands thoroughly before you start, as you'll be handling ready-to-eat food.
Using a sharp knife, cut the mozzarella into even cubes. About 1 inch by 1 inch should do nicely. Wrap a slice of your favorite salami around each of the mozzarella cubes.
Next, assemble your skewers, alternating the cubes of cheese/salami, artichoke hearts, olives and tomatoes. Place the completed skewers in a baking dish of your desired size.
Mix together the lemon juice and balsamic-basil vinaigrette and pour the mixture over the skewers. Use a spoon to avoid any unnecessary mess or spills!
Cover the baking dish with a paper towel and place it in the fridge to chill for about eight hours. This allows plenty of time for the marinade to add lots of great flavor.
Once chilled, remove the skewers from the marinade and plate individually or on a platter. Serve your guests and eat up!
