A tropical treat that packs a punch

Don't be fooled, the Caribou Lou isn't your typical fruity, girly cocktail. The combo of 151 proof rum, coconut rum and pineapple juice is strong enough to stand up against even the manliest cocktails. One sip of Caribou Lou, and you'll be transported to white sand beaches and crystal clear waters, especially if you drink more than one.

Today we're going to be mixing up a Caribou Lou. To make this daring drink, all you need is 151 proof rum, coconut rum and pineapple juice. Mix the ingredients together in a shaker, or you can serve with ice in a highball glass. Last, garnish your Caribou Lou with a fresh pineapple wedge.

Ingredients:

Additional supplies:

  • Cocktail shaker
  • Glasses
  • 151 proof rum
  • Coconut rum
  • Pineapple juice
  • Fresh pineapple wedges for garnish
  • Ice

Directions:

  1. Fill a cocktail shaker with ice and add your ingredients. You'll need one part coconut rum, one-half part 151 proof rum and five parts pineapple juice. Adjust your measurements to suit the number of drinks you are making.
  2. Shake the cocktail shaker until the ingredients are combined.
  3. Strain into a glass filled with ice.
  4. Garnish with a wedge of fresh pineapple.
  5. Sit back and enjoy your freshly made Caribou Lou.

Mix it up

  • Serve in a coconut shell for even more tropical flair.
  • Turn this cocktail into a granita by freezing the ingredients and scraping the top when it starts to solidify. Continue to scrape the top layer every 20 minutes or so until you have a slushy consistency. The 151 should prevent it from becoming too solid.
  • Add in other tropical flavors like mango puree or banana liqueur.
  • Make ice cubes out of pineapple juice so your cocktail doesn't get watered down.
  • Add in frozen berries or fruit to keep the drink cool and make it look even prettier.
  • For festive presentation, dip the rim in pineapple juice and then in shredded coconut or colored sugar.
