Grill lover’s

Love the taste of roasted vegetables? Then this simple, high-end tasting panini is just the lunchtime sandwich for you.


  • 1 baguette, sliced lengthwise into long slices
  • 1 red bell pepper, sliced into large chunks
  • 1 zucchini, thinly sliced
  • 1 yellow squash, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon Italian dressing
  • 2 slices provolone cheese


  1. Heat pan to medium heat and place small amount of olive oil in pan.
  2. Grill each vegetable until you see a light char.
  3. Clean pan and reheat to medium heat. Brush each slice of baguette with olive oil on one side.
  4. Pile cheese, veggies and Italian dressing on plain side, then top with other slice of bread, oiled side out.
  5. Grill on each side until cheese is melted and bread is golden brown.


A take on the classic Margherita pizza, this yummy panini uses classic, fresh flavors for a bold and comforting taste.


  • French or sourdough bread, cut into sandwich-sized slices
  • 1 Roma tomato, sliced
  • 4 leaves fresh basil, chopped
  • 1 tablespoon olive oil
  • 2 slices mozzarella cheese
  • 1 teaspoon balsamic vinegar


  1. Brush each slice of bread with olive oil on one side.
  2. Flip over one slice and place cheese, tomatoes, basil and a dash of olive oil and balsamic vinegar inside.
  3. Top with other slice of bread, oil side out, and grill on medium skillet or panini press until each side is golden brown and cheese is melted.

Pesto and artichoke

Pesto and artichoke are classic flavors that go together flawlessly. After all, this combination is classically Italian — just like traditional paninis!


  • 1 baguette, sliced lengthwise into long slices
  • 1 tablespoon store bought or homemade pesto
  • 2 slices provolone cheese
  • 3 pickled artichoke hearts, chopped
  • 1 tablespoon olive oil


  1. Heat pan or panini press to medium heat. Brush each slice of bread with olive oil on one side.
  2. On dry side of one slice, spread pesto evenly. Then, top with cheese and artichoke hearts.
  3. Place other slice of bread on top, oiled side out.
  4. Grill on each side in pan until golden brown and cheese is fully melted.
