These simple and flavorful quick breads will make a big hit this summer. Serve alone or with fresh whipped cream, either way they're delicious!

Carrot cake quick bread

During the summer no one wants to spends hours in a hot kitchen. These quick and easy summer quick breads will be done in no time, so you don't have to spend any more time than necessary in that hot kitchen.

The first bread is a twist on classic carrot cake. Unlike the traditional cake, it's not covered in thick frosting but topped with a sweet cinnamon cream cheese glaze! The second bread combines blueberries and lemon, a classic combination. It's sweet and tart and topped with a tart lemon glaze.

Carrot cake quick bread recipe

Yields 4 mini loaves

Ingredients:

  • 2-1/2 cups all-purpose flour
  • 12 ounces grated carrots (use your food processor to save time)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon kosher salt
  • 1-1/3 cups white sugar
  • 1/4 cup dark brown sugar
  • 3 large eggs
  • 1 cup plain Greek yogurt
  • 4 ounces vegetable oil

Directions:

  1. Preheat oven to 350 degrees F.
  2. Butter and flour four mini loaf pans.
  3. Add carrots to large bowl and top with sifted flour, baking powder, baking soda, spices and salt. Toss until the carrots are coated with flour.
  4. In a food processor, combine the sugars, eggs and yogurt. Turn on and while running slowly drizzle in vegetable oil. Pour this mixture into the carrot mixture and stir until combined.
  5. Divide batter evenly among four mini loaf pans, making sure to not fill more than two-thirds full. If you have extra batter left over, you can easily turn these into muffins.
  6. Cook in oven for 20 to 25 minutes until a toothpick comes out clean.
  7. Remove from oven and allow to cool for 15 minutes inside pan. Then remove from pan and cool on baking rack. Once cool drizzle with cinnamon cream cheese glaze.

Cinnamon cream cheese glaze recipe

Yields 1/2 cup glaze

Ingredients:

  • 4 ounces room temperature cream cheese
  • 1 cup powdered sugar
  • 1/2 stick room temperature butter
  • 1/2 teaspoon vanilla paste
  • 1/2 teaspoon cinnamon

Directions:

  1. Combine all ingredients until a smooth glaze is formed. Drizzle over cooled loaves of carrot cake bread.

Blueberry lemon quick bread recipe

Yields 4 mini loaves

Ingredients:

  • 1-1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 8 ounces plain Greek yogurt
  • 1 cup white sugar
  • 3 large eggs
  • 1 tablespoon grated lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/2 cup vegetable oil
  • 2 cups wild blueberries (if frozen let them thaw)

Directions:

  1. Preheat oven to 350 degrees F. Butter and flour four mini loaf pans.
  2. In a smaller mixing bowl, sift together all-purpose flour, baking powder and kosher salt. Set aside.
  3. In a large mixing bowl combine yogurt, sugar, eggs, lemon zest, vanilla extract and vegetable oil. Mix together until combined and slowly fold the dry Ingredients into the wet Ingredients.
  4. In a smaller bowl add about one tablespoon flour to wild blueberries and toss to combine. Add to batter being careful to not break the berries while stirring.
  5. Divide batter evenly among four mini loaf pans, making sure to not fill more than two-thirds full. If you have extra batter left over, you can easily turn these into muffins.
  6. Bake for 25 to 30 minutes until a toothpick comes out clean.
  7. Let cool in the pans for 15 minutes before turning out of the pan and cooling on baking rack.
  8. Once cool drizzle with lemon glaze.

Lemon glaze recipe

Yields 1/2 cup glaze

Ingredients:

  • 3 tablespoons fresh squeezed lemon juice
  • 1 cup powdered sugar

Directions:

  1. Add ingredients: and mix until combined. Drizzle over blueberry loaves.
