Gluten-free California Monte Cristo recipe

With a little spin on the classic Monte Cristo sandwich recipe, this gluten-free version doesn't compromise taste… it enhances it.

Ingredients:

  • 2 slices gluten-free bread
  • 2 large eggs, beaten
  • 1/4 cup milk or rice milk
  • Nonstick cooking spray
  • 1 slice gluten-free turkey
  • 2 slices gluten-free ham
  • 2 slices Swiss cheese
  • Mayonnaise

Directions:

  1. Heat skillet to 350 degrees F.
  2. Mix eggs with milk in a shallow dish.
  3. Spread mayonnaise on the inside of each piece of bread.
  4. Place cheese, ham and turkey on the mayonnaise side of the bread.
  5. Spray skillet with nonstick cooking spray.
  6. Dip both sides of the sandwich in the egg and milk mixture.
  7. Place the sandwich on the skillet for five minutes on until each side or until cooked.
  8. Remove sandwich from the skillet.

Tip: For added flavor, top with thinly sliced tomatoes and avocado.

Gluten-free garlic, herb and cheese baguette recipe

Complement your rice pasta dish or whip up a quick appetizer with this delicious and easy sandwich recipe using a gluten-free baguette.

Ingredients:

  • 1 gluten-free baguette
  • 2 teaspoons garlic (minced or jarred)
  • 4 teaspoons butter
  • 3/4 cups grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Pinch of salt
  • Pinch of pepper

Directions:

  1. Heat oven to 350 degrees F.
  2. Slice the baguette lengthwise down the middle.
  3. Spread butter and garlic on each side.
  4. Add Parmesan cheese.
  5. Sprinkle seasoning, salt and pepper over Parmesan cheese.
  6. Bake 20 minutes.

Gluten-free berry breakfast toast

This sandwich recipe helps moisten your gluten-free bread and gives you a sweet breakfast. It's so good that your kids won't even know they are eating gluten-free bread.

Ingredients:

  • 2 slices gluten-free bread
  • 2 large eggs, beaten
  • 1 teaspoon brown sugar
  • 1/2 cup blueberries

  • Fresh blueberry syrup
  • Whipped cream (optional)

Directions:

  1. Heat skillet to 350 degrees F.
  2. In a shallow dish, soak the bread in the eggs for 10 minutes each side.
  3. Place bread on the skillet for five minutes on each side or until cooked.
  4. Remove bread from the skillet.
  5. Sprinkle brown sugar on each piece while bread is still hot.
  6. Top with fresh berries, blueberry syrup and a dollop of whipped cream.
