The fish taco started out as a quick meal for hungry surfers and quickly turned into a national sensation. By using frozen fish, bagged slaw mix and shredded cheese, you can put these together almost as quickly as you'd make a peanut butter sandwich.
You can use either fish sticks or popcorn fish in this recipe. The popcorn fish usually cooks a little faster. Some brands have instructions for cooking in a microwave.
You need to have a few things on hand before you get started:
Tacos are fun to make; consider putting a platter of optional ingredients on the table. This allows your family to add their favorite toppings to the tacos.The following foods work well:
Cook the fish according to the instructions on the package. Put the slaw mix in a bowl and set aside. Whisk the honey and lime juice together with a fork until well blended, and pour over the slaw mix. Used the fork to toss the slaw and ensure that it is coated with the lime and honey mixture.
Mix the sour cream and salsa in a bowl and place it on the table for people to spoon onto their tacos. Arrange the optional ingredients on a platter and place it on the table as well. Just before the fish is finished cooking, wrap the tortillas in a damp tea towel and microwave them for two to three minutes or until warm and pliable.
Lay a warm tortilla on a plate and spread a few tablespoons of the cabbage on it. Top with the cooked fish and a spoonful of the salsa mixture. Sprinkle with cheese, and serve to five appreciative people.
