Creamy tomato basil soup
1 (28 ounce) can of whole stewed tomatoes
1 (14.5 ounce) can of diced tomatoes with garlic and basil
2 fresh tomatoes, sliced into quarters
1 cup vegetable broth
4 ounces cream cheese
2 teaspoons chopped garlic
1 cup diced onion
1/4 cup chopped fresh basil
Sea salt and pepper to taste
Fresh grated Parmesan cheese
Add the ingredients to a slow cooker. Cook on high for three to four hours. Using an immersion blender, blend the ingredients until you have a smooth, creamy consistency. Cook for another hour.
Serve topped with fresh grated Parmesan cheese and fresh basil.
