Tonight's Dinner: Curried shrimp rolls

Salads are great during a warm summer night, but they don't just have to be greens, tomatoes, and croutons. They can be filled with chicken and celery, tuna and onions, or shrimp and mayonnaise. Add some spices, and a little arugula and you suddenly have a deliciously light meal that's perfect for a warm summer night under the stars.

You can have the shrimp salad in a bowl, but if you pile it into a hot dog bun it's even better because then you don't have to pack silverware. Curried Shrimp Rolls

Ingredients

• 1/4 cup of mayonnaise
• 1 tablespoon lemon juice
• 1 teaspoon curry powder
• Salt and pepper to taste
• 1 pound cooked shrimp, chopped
• 2 stalks celery, chopped
• 1 cup arugula
• 4 hot dog buns, toasted

Directions

1. In a medium bowl, whisk together the mayonnaise, lemon juice, curry powder, salt, and pepper to taste.
2. Add the shrimp, celery, and arugula to the bowl and toss to combine; spoon into buns and serve.
