Five meaty taco recipes

Serving up your favorite variety of tacos is a quick and easy way to satisfy the entire family any day of the week. Grab a flour tortilla or your golden hard shells and pile on the freshest ingredients with fillings from ground beef and steak to chicken or fish.

Steak tacos

With these five ways to do tacos, you're sure to please even the most discerning eater in your house. Top with chopped tomatoes, diced onions, cilantro, shredded lettuce, cheese, guacamole and salsa -- the options are endless!

Easy season ground beef tacos

Ingredients:

  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes (omit for a milder version)
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper

Directions:

  1. In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container.
  2. Add to browned ground beef, drained of excess fat and enjoy in your favorite taco shell!

Chicken tacos

Ingredients:

  • 6 skinless, boneless whole chicken breasts, halved
  • 4 cups chicken broth
  • 1 whole jalapeno chili pepper
  • 2 large crushed garlic cloves
  • 1/2 teaspoon crushed dried oregano leaves
  • 1/2 cup medium or hot taco sauce
  • 2 tablespoons fresh lime juice

Directions:

  1. Trim fat from chicken breasts, rinse thoroughly and pat dry.
  2. In large, deep pan, bring chicken stock, chili pepper, oregano and garlic to a boil.
  3. Reduce heat to low and add chicken.
  4. Simmer uncovered for 10 minutes.
  5. Shred chicken.
  6. Mix taco sauce and lime juice together in a small bowl.
  7. Pour taco sauce mixture over chicken and toss to coat evenly.
  8. Spoon chicken into taco shells and serve immediately.

Low-fat fish tacos

Ingredients:

  • 1/2 cup non-fat mayonnaise
  • 1/2 cup non-fat sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 (1.25 ounce) package taco seasoning mix, divided
  • 1 tablespoon vegetable oil
  • 2 tablespoons lemon juice
  • 1 pound white fish fillets, cut into 1-inch pieces

Directions:

  1. Mix mayonnaise, sour cream, cilantro and 2 tablespoons taco seasoning in a medium mixing bowl.
  2. In another medium bow, add remaining taco mix, vegetable oil, lemon juice and fish.
  3. Heat large skillet over medium heat.
  4. Add fish to skillet and cook 4-5 minutes, until fish flakes; remove to serving bowl.
  5. Fill taco shells with cod mixture, top with sour cream mixture.

Steak tacos

Ingredients:

  • 1/3 cup Italian dressing
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon chili powder
  • 2 boneless beef chuck shoulder steaks, 3/4- inch thick

Directions:

  1. Combine Italian dressing, fresh cilantro and chili powder in a small bowl.
  2. Place beef steaks in a Ziploc plastic bag and add the marinade; refrigerate for 6-24 hours.
  3. Preheat grill; grill beef steaks over direct heat on an uncovered grill for 15 to 20 minutes, turning once.
  4. Serve in warm tortillas with shredded lettuce, salsa, chopped onions and sour cream.

Lentil tacos

Ingredients:

  • 1 cup finely chopped onion
  • 1 clove minced garlic
  • 1 teaspoon canola oil
  • 1 cup dried lentils, rinsed
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 2 1/2 cups chicken broth
  • 1 cup salsa

Directions:

  1. In a large non-stick skillet, saute the onion and garlic in oil until tender.
  2. Add the lentils, chili powder, cumin and oregano; cook and stir for 1 minute.
  3. Add broth and bring to a boil.
  4. Reduce heat; cover and simmer for 25 to 30 minutes or until the lentils are tender.
  5. Uncover and cook for 6 to 8 more minutes until the mixture is thickened.
  6. Mash the lentils.
  7. Stir in salsa and spoon the mixture into taco shells, garnishing with lettuce, tomato, cheese and sour cream.
