But these curvy nuts are actually covered in urushiol, the itchy chemical found in poison ivy and poison oak. Before cashews hit the market, they are steamed to remove the urushiol – your risk of having an allergic reaction to cashews is pretty low, unless the cashews you eat are truly raw or haven't been properly steamed.
