Muffin Recipes
Morning can be crazy and you may not always have time to eat a healthy breakfast. Prepare a few varieties of healthy muffins and freeze them to grab and go when you are running late.

Raisin oat bran muffins
Makes 12 muffins
Ingredients
- 3/4 cup oat bran
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1 egg
- 4 tablespoons canola oil
- 1/3 cup applesauce
- 1/2 cup granulated sugar
- 1/4 cup chopped walnuts
- 1/2 cup raisins
Directions
- Preheat oven to 350 degrees F and line a muffin pan with paper liners.
- Mix bran with flour, baking soda, and baking powder in a small bowl.
- In a separate bowl, beat egg, oil, and applesauce until smooth then beat in sugar. Gradually beat in flour mixture and stir in walnuts and raisins.
- Pour batter into muffin tins and bake 25 to 30 minutes, or until a toothpick comes out clean. Let cool for a few minutes before removing from pan.
Chocolate chunk banana muffins
Makes 12 muffins
Ingredients
- 1 1/2 cups whole wheat flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 egg
- 1/2 cup plain low fat yogurt
- 1/4 cup agave syrup
- 1/4 cup canola oil
- 1 banana, smashed
- 3/4 cup chocolate chunks
Directions
- Combine flour, baking powder, salt, and cinnamon in a small bowl.
- Beat egg with yogurt, agave, and oil until smooth then beat in banana; gradually beat in flour mixture until well combined; stir in chocolate chunks.
- Pour batter into muffin pan and bake 25 to 30 minutes, or until a toothpick comes out clean.
Honey-almond date muffins
Makes 12 servings
Ingredients
- 2 cups whole pitted dates
- 3/4 cup boiling water
- 2 cups whole wheat flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 4 tablespoons unsalted butter, softened
- 3/4 cup packed brown sugar
- 2 eggs
- 1 tablespoon honey
- 1/2 cup chopped almonds
Directions
- Preheat oven to 350 degrees F and line a muffin pan with paper liners.
- Place dates in a bowl and pour boiling water over them; let soak for 15 minutes, or until softened. When dates have softened, purée in a blender until slightly chunky.
- Mix flour with baking powder and salt in a small bowl.
- Beat butter with brown sugar until smooth then beat in eggs and honey; gradually beat flour mixture into butter mixture until well combined; stir almonds into batter.
- Pour batter into pans and bake 25 to 30 minutes, or until a toothpick comes out clean.
