Morning can be crazy and you may not always have time to eat a healthy breakfast. Prepare a few varieties of healthy muffins and freeze them to grab and go when you are running late.

Oat rasin muffin

Raisin oat bran muffins

Makes 12 muffins

Ingredients

  • 3/4 cup oat bran
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 egg
  • 4 tablespoons canola oil
  • 1/3 cup applesauce
  • 1/2 cup granulated sugar
  • 1/4 cup chopped walnuts
  • 1/2 cup raisins

Directions

  1. Preheat oven to 350 degrees F and line a muffin pan with paper liners.
  2. Mix bran with flour, baking soda, and baking powder in a small bowl.
  3. In a separate bowl, beat egg, oil, and applesauce until smooth then beat in sugar. Gradually beat in flour mixture and stir in walnuts and raisins.
  4. Pour batter into muffin tins and bake 25 to 30 minutes, or until a toothpick comes out clean. Let cool for a few minutes before removing from pan.

Chocolate chunk banana muffins

Makes 12 muffins

Ingredients

  • 1 1/2 cups whole wheat flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 egg
  • 1/2 cup plain low fat yogurt
  •  1/4 cup agave syrup
  • 1/4 cup canola oil
  • 1 banana, smashed
  • 3/4 cup chocolate chunks

Directions

  1. Combine flour, baking powder, salt, and cinnamon in a small bowl.
  2. Beat egg with yogurt, agave, and oil until smooth then beat in banana; gradually beat in flour mixture until well combined; stir in chocolate chunks.
  3. Pour batter into muffin pan and bake 25 to 30 minutes, or until a toothpick comes out clean.

Honey-almond date muffins

Makes 12 servings

Ingredients

  • 2 cups whole pitted dates
  • 3/4 cup boiling water
  • 2 cups whole wheat flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 2 eggs
  • 1 tablespoon honey
  • 1/2 cup chopped almonds

Directions

  1. Preheat oven to 350 degrees F and line a muffin pan with paper liners.
  2. Place dates in a bowl and pour boiling water over them; let soak for 15 minutes, or until softened. When dates have softened, purée in a blender until slightly chunky.
  3. Mix flour with baking powder and salt in a small bowl.
  4. Beat butter with brown sugar until smooth then beat in eggs and honey; gradually beat flour mixture into butter mixture until well combined; stir almonds into batter.
  5. Pour batter into pans and bake 25 to 30 minutes, or until a toothpick comes out clean.
