If you like Indian, Thai, or Chinese cuisine, you're going to love this recipe. It's warm and ever so slightly sweet. A perfectly satisfying meal for a cold mid-autumn evening. To add a little zest to the recipe, you can sprinkle your chicken with cilantro and sliced almonds.

Apricot Chicken

  • 3 tablespoons butter
  • 1 onion, diced
  • 1 pound of chicken cutlets
  • 1 1/2 cup chicken broth
  • 1 cup apricot jam
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cardamon
  • Dash of Tabasco sauce

In a large saucepan, heat the butter over medium-high heat. Add chicken and onion and cook until chicken is cooked throughout, about 5 minutes. Stir in remaining ingredients. Simmer over medium heat until the sauce has thickened. Salt and pepper to taste before serving over steamed white rice.
