Healthy, hearty, and full of flavor, this Zucchini Quiche offers an eyecatching way to serve up the bounty of zucchini that seems to crop up everywhere during these first weeks of autumn. Served alongside a warm glass of apple cider, you might even decide the leftovers are good enough to eat the next morning for breakfast!
Press the pie crust into a tart pan, or large pie tin. In a large bowl, beat together eggs, milk, and flour until well combined. Fold in grated cheese. Pour mixture into pie crust. Arrange sliced zucchini atop. Bake in an oven preheated to 400 degrees for 35-40 minutes, or until the center of the quiche has set (if baking in a tart pan, the quiche will only need 30-35 minutes). Allow to cool before serving.
