Honey caramel corn

Gluten FreeHoney caramel corn recipe

Makes 20 servings

Ingredients:

  • 1 cup unsalted butter, at room temperature
  • 2 cups lightly packed brown sugar
  • 1/2 cup honey
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon pure vanilla extract
  • 5 quarts popped popcorn

Directions:

  1. Preheat oven to 250 degrees F.
  2. In a medium-sized saucepan over medium heat, melt butter. Stir in brown sugar, honey and salt. Bring to a boil, stirring constantly. Boil for about 4 minutes.
  3. Remove saucepan from heat and stir in soda and vanilla. Place popcorn in a large bowl. Pour in a thin stream over popcorn, stirring to coat.
  4. Place in two large shallow baking dishes and bake, stirring every 15 minutes, for about 1 hour. Remove from oven and let cool slightly before breaking into clumps.

Ingredients:

  • Gluten free cookies

    2/3 cup unsalted butter, softened at room temperature
  • 2/3 cup canola oil
  • 1 3/4 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon pure almond extract
  • 2 eggs
  • 2 1/2 cups rice flour
  • 1 cup cornstarch
  • 4 teaspoons baking soda
  • Colored frosting and Halloween cookie décor of your choice

Ingredients:

  1. In the bowl of a standup mixer fitted with the paddle attachment, beat butter, sugar, corn syrup, vanilla extract, and almond extract until smooth. Beat in eggs one at a time, beating well after each addition.
  2. In a medium-sized bowl, whisk together flour, cornstarch, and baking soda. Add flour mixture to the butter mixture and blend on medium-low speed until well combined. Cover bowl with plastic and refrigerate the dough for 3 to 4 hours.
  3. Preheat oven to 350 degrees F. Make 1/2-inch dough balls and place them on cookie sheets about 3 inches apart. Bake for about 8 minutes. Cool cookies on paper towels or wire racks.
  4. Decorate with frosting and Halloween décor of your choice.

Gluten FreeDevilish egg recipe

Makes 24

Ingredients:

  • 12 hard-cooked eggs, halved, yolks reserved in a large bowl
  • 1/2 cup mayonnaise
  • 1 tablespoon prepared mustard
  • 1 teaspoon white wine vinegar
  • Salt and fresh ground pepper to taste
  • 24 medium black olives, halved
  • 24 1-inch strips of roasted red peppers
  • 24 tiny sprigs of fresh dill
  • Paprika for dusting

Directions:

  1. In the bowl with the egg yolks, add mayonnaise, mustard, vinegar, and salt and pepper to taste. Mix until smooth. Place yolk mixture in a pastry bag and pipe mixture into egg whites.
  2. Arrange olive halves on the top end of the yolk mixture, forming eyes. Arrange red pepper slices as mouths and the dill as a nose. Dust with paprika. Refrigerate until ready to serve.
