?Cooking should be easy during the holidays, so you have more time to spend with friends and family. Preparing something like pound cake days in advance makes life easier. Just slice, grill and top with whatever tickles your fancy!
I love to throw everything on the grill for the 4th of July including the dessert, it makes summer official.
Grilled Strawberry Blueberry Shortcake
Ingredients:
Pound Cake
3 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
2 sticks butter
1 cup cream cheese
2 cups sugar
1 cup brown sugar
5 eggs
1/4 cup bourbon
2 teaspoons of vanilla extract
Directions:
Heat oven to 325. Grease and flour two 9-by-5 loaf pans
Combine flour, baking soda, and salt in medium bowl
Combine soften butter and cream cheese in a large bowl beat on medium speed until light and fluffy
Add the sugar and beat a few minutes more. Scrape down the sides and add eggs one at a time, fully incorporate each time before add the next
Add flour in three batches, beating after each addition until flour is mixed in
Stir in bourbon and vanilla
Bake for 1 hour until cake pulls away at the sides, is golden brown and toothpick comes out clean
Cool completely and slice into 2 inch thick slices
Melt one stick of butter and 1/4 cup maple syrup. Brush both sides of pound cake a grill a couple minutes on each side
Top with strawberries and blueberries and whipped cream and a drizzle of caramel sauce
