This distinctly-flavored crunchy bulb is a star in Mediterranean-style dishes and is uniquely delish as a side dish or as a garnish on soups, sandwiches or salads. Roasted Scallops with FennelMakes 4 servings Ingredients: Directions: 2. Arrange fennel, onion, garlic, tomatoes and thyme in pan. Season with salt and pepper. Drizzle oil over vegetables and toss. Roast in oven for 20 minutes or until tender. 3. When vegetables are finished, add scallops to pan. Season with salt and pepper and drizzle with lemon juice. Cook 10 to 15 minutes or until salmon is flaky. Baked FennelMakes 4 servings Ingredients: Directions: 2. Stir in the half and half and cream cheese. Saute until well combined.
